The 12th annual Executive Seminar in Analytical Chemistry, ESAC 2012, was held on April 18, 2012, at Scandic Copenhagen Hotel.

Nutrigenomics Of The Daily Apple

Apples are traditionally associated with healthiness. However, very few scientific studies have been done to pinpoint and understand the actual health benefits of apples. As part of the large EU Project (ISAFRUIT), the effects of apples in animals and in humans has been investigated - using transcriptomics and metabolomics to further understand the effects. Apples can influence the gut microbiota, lipid transport, enzymatic defense systems and other functions in rats, which could explain some health effects observed in both rats and humans.
